Sarris was commissioned to design the new "quick service food retail " concept store for Steve Costi's Famous Fish.

The Costi family joined the seafood business in 1958, and since then has built a strong reputation for offering up the highest quality seafood. Allister created a modern, customer-friendly environment with a " Greek Island " inspired interior that fused the traditional with the new . The materials used in the store reflect traditional fishing boat timber boards, lime washed white painted panels, blue and white striped shop awnings and heavy anchor ropes that dress the entry columns and decorate the ceilings.
